I hardly scrap about Greg… without the kids in it too. Just like I hardly scrap about myself. I don’t really have a lot of pictures of him at work. He is always away on nightstops and usually all the places that he goes we are not there. And all the pictures that he takes with his friends and colleagues I hardly get to see (maybe I’m not suppose to see..) And even when I get to see some of them, I find it hard to scrap about it as I’m not ‘connected’ to it because I’m not there. I think if you are a scrapper you know what I mean (or is it just me?) So….
Anyways… I’ve always wanted to make a page like this but was lack of a good photo. Even this one was him camwhoring in the cockpit and I found it at random in the computer.. :-D So I made this page… Our Everyday Hero…when he is not at home with us…

Happiness Is Being In The Water

Emme simply loves being in the water… I think nothing else makes her happier. Once she is in the water it’s hard to get her out, even when all her fingers and toes looks like raisins… Initially we got her those floats where she can sit inside but she didn’t like it at all because she is not immersed in the water, she squirming to get out of it, so that didn’t work. We thought we can just put her inside there and just push her around the water…less work for us.. **hehehe** But she didn’t like it at all. So now we have a giant tortoise float in our garage starring at me when I park the car. :-| So then we got her those armbands, and she liked that coz she is in the water just like the other kids… **roll eyes** But it’s more ‘work’ for us, coz we have to hold on to her as she still cannot balance and hold herself upright in the water yet. But she is already starting to learn so that’s good.

Durian Cake- Our Family Favorite!!

DURIANS!!!! It’s either you LOVE, LOVE, LOVE it or you’ll pinch your nose and walk away… But so happens in this house everybody loves durians (except for Master Tan) :-(
And I have been baking durian butter cakes like crazy because durians are abundance now. There are durian stalls in every corner here in Seri Kembangan! And there have been quite a few request for more and a few of my baking buddies have requested for the recipe… While some people are rather secretive about their recipes and wouldn’t want to disclose their best kept secrets…. But I want to share it with all my friends…(because I’m nice like that) :-D LOL!! Actually it’s a very simple recipe of butter cake and just add durians or can be replace with bananas if you are not a durians fan.

DURIAN BUTTER CAKE

250g unsalted butter
230g caster sugar or fine granulated sugar
4 grade A eggs
250g durian flesh
250g self raising flour (sifted twice)
3-6 tBsp milk
vanilla essence

Line a sq tin with parchment paper. Preheat oven to 180C

Cut butter into small pieces, place in a stand mixer with sugar and beat until light and fluffy at med speed. Beat in eggs, one at a time, gradually.

When it is well mixed, add in durian flesh and vanilla. Beat for a bout 2 mins, scrapping down the sides with a spatula.

Fold in sifted flour, roughly in 3 portions, adding a tBsp of milk after each addition.
*add more milk if the mixture is too thick.

Pour into prepared cake tin. Bake for about 40-50 minutes or until cake is golden brown and skewer/toothpick comes out clean when inserted into the middle of the cake.
