Durian Cake- Our Family Favorite!!

DURIANS!!!! It’s either you LOVE, LOVE, LOVE it or you’ll pinch your nose and walk away… But so happens in this house everybody loves durians (except for Master Tan) :-(
And I have been baking durian butter cakes like crazy because durians are abundance now. There are durian stalls in every corner here in Seri Kembangan! And there have been quite a few request for more and a few of my baking buddies have requested for the recipe… While some people are rather secretive about their recipes and wouldn’t want to disclose their best kept secrets…. But I want to share it with all my friends…(because I’m nice like that) :-D LOL!! Actually it’s a very simple recipe of butter cake and just add durians or can be replace with bananas if you are not a durians fan.

DURIAN BUTTER CAKE

250g unsalted butter
230g caster sugar or fine granulated sugar
4 grade A eggs
250g durian flesh
250g self raising flour (sifted twice)
3-6 tBsp milk
vanilla essence

Line a sq tin with parchment paper. Preheat oven to 180C

Cut butter into small pieces, place in a stand mixer with sugar and beat until light and fluffy at med speed. Beat in eggs, one at a time, gradually.

When it is well mixed, add in durian flesh and vanilla. Beat for a bout 2 mins, scrapping down the sides with a spatula.

Fold in sifted flour, roughly in 3 portions, adding a tBsp of milk after each addition.
*add more milk if the mixture is too thick.

Pour into prepared cake tin. Bake for about 40-50 minutes or until cake is golden brown and skewer/toothpick comes out clean when inserted into the middle of the cake.

Teddy and elephant ham and cheese sandwich.
Cait's Teddies and Elephants..

This morning, I woke up with a terrible sore throat and very phlegmy. Not good.. :-( My maid didn’t fix breakfast for the kids… :-( Not good. So I quickly put together these sandwich. Nothing special, really.. I really need to get more moulds. I think Aiden and Cait is getting a little bored with these.. :-P

Aiden's Octopus (hantu) bento

For some reason.. It has been a very tiring day for me. I feel like I have not stopped since I woke up this morning and now I’m feeling like I’m gonna be sick. Thats why today’s bento also very ‘kalam kabut’. Thought I’ll make something different for them today, so I cooked some cabonara with tri-color pasta. I didn’t actually planned the ‘octopus’ it just kinda pop into my head as I have seen it in some bentos (I just don’t remember who’s) As you all know that I have not received my punchers yet, so I got creative and used my paper puncher (from my scrapbooking stash) for the mouth, and black sesame seeds for the eyes. Unfortunately… when I asked Aiden what it looks like, he said ‘Like a ghost.” Sigh! Hokay…. ya, ya.. I know. Need more practice Mommy! What do you all think? I know it’s not perfect, but honestly… look like a hantu meh? :-|

Lol!! More reason to ‘invest’ in some more bento tools… ;-)

Ultra Cool Daddy left for Perth (again) tonight. He very ‘manja’ now… Also wants his bento for work.. As he hardly eats meat now, so his bentos are quite easy to put together. He likes his salads and raw stuff. *insert roll eyes here* SoI really don’t mind fixing him something to go. Not like Air Asia feed their crew well.. Yes, they do get a crew meal but apparently it’s really pathetic, furthermore, it’s not up to Ultra Cool Daddy’s standards… No salads and fresh fruit. o this is what he brought to work today. The photo is really bad, and honestly didn’t do justice to my bento.. *blush* I was rushing to send him and get the kids some dinner. So I just simply took a snap of it but here it is…

Tuna Onigiri Bento

It’s tuna onigiri, prawn and avocado salad, edamame and dragon fruit. I hope he likes it.
